AMARI is an exquisite olive oil produced in the region of Amari and vicinity in central Crete. It is made from the luscious “hondri” or “plump” olives, which is the fruit of the ultimate hybrid of the olive trees developed in Crete over thousands years of cultivation. Unlike most other types of olives, some of the “hondri” olives can be eaten directly from the tree when they ripen.
These olives are allowed to ripen on the tree to develop fully their nutrients, flavor, sweetness and aroma. As olives ripen they are handpicked at their peak, few at the time, and the olive oil is extracted using the cold press method, which retains all of the olive’s nutrients and flavor. The golden olive oil produced is cholesterol free, sweet and ready for immediate consumption.
Because the harvesting of this type of olive is very labor intensive, most producers have turned to the cultivation of other species which are less labor intensive and therefore more commercially competitive. The people of Amari believe that “hondri”, grown by their forefathers for thousands of years, produces the highest quality olive oil and is worth the extra effort needed to produce. The richer, olive oil produced by “hondri” has preserved them in good health and is the best olive oil for the human mechanism. The tenacity of these growers has prevented the extinction of the noble “hondri”. It is needless to say that the supply of this oil is rather limited and we are lucky to have it. .

Our salt-cured black olives are from the Amari region in Rethymno, Crete. They are made from the “Hondri” or “plump” olive that is revered for its sweet taste and juice content. The fruit is left on the tree to ripen until it develops its maximum flavor and texture. There must be ample summer sunshine and winter rain to nourish this olive before salt-curing can be considered. Not every season is favorable, so quantities are limited. Even though they are preserved in natural sea salt, they are surprisingly sweet. They are a favorite snack in Crete and are also great in salads, pastas, rustic stews or tapenades.

•THE HERB THAT SAVED AENEUS: Aeneus, goddess Aphrodite's son, owed his life to dittany. After the battle of Troy, Aeneus went to Italy where he was connected with the founding of Rome. During one of the most crucial duels there, he was seriously hurt. According to Virgilius, Aphrodite raced to Crete, cut some dittany and with it she healed him:
The arrow was expelled from the wound and the pain stopped! Virgilius was inspired by the ancient story which is also recorded by many other writers (e.g. Aristoteles) and according to which, if a wild goat got hurt by a hunter's arrow, it ran to find some dittany, chewed it and the arrow was expelled!
• HARVESTING: During the flowering period (June-October)
•DESCRIPTION: A short shrub with hairy stems branched from the base and reaching a height of 40cm. The whole plant is hairy and has a downy appearance. The leaves are white-green, round or ovare of the same length and width, 15 (4 30)mm. The flowers are pink, 11(8-15)mm long. It is indigenous to Crete and grows wild in many parts of the island, on unapproachable limestone slopes, at an altitude of 0-1900 m.
The plant has considerable economic interest for Crete. It is the only herb which is cultivated owing to its high price in the market. This fact helped it survive as a wild plant. In former times its price was as high as 1 gold pound per kilo and quite a few people lost their lives in their effort to pick it on steep slopes. Currently 2 varieties are cultivated in the area of Embaros, the narrow-leafed and the broad-leafed. The former has a stronger scent while the latter yields more in its dried condition.
•MEDICINE: The herb's content in volatile oil is 1.33-1.6% and its main ingredient is carvacrol(58-82%) which justifies its germicidal action. In the ancient world it was in great demand and was surrounded with holy traditions. A cataplasm for the wounds was made with dittany, which was regarded as sacred, because it was said that they had found it written on a scroll at the sanctuary of Memphis.
Hippocrates considered it "okytokion", (fascilitating childbirth). Popular medicine uses it to heal interior wounds and to alleviate stomacheache and a sore throat.
•HERB OF THE GODDESS OF CHILDBIRTH. In ancient times, dittany was the herb of Eleuthia, the goddess who aided pregnant women to give birth!
She was succeeded by Artemis. It is recorded that there was a statueof her crowned with a wreath of dittany.
